A cooling or freezing tunnel 1 comprises a conveyer 6 moving articles such as foodstuffs beneath sprays 7 of a cryogenic liquid in a liquid contacting zone 5 from a zone 4 wherein the articles are precooled by contact with vapour of the liquid, and fans 8 are mounted above the conveyer in the precooling zone in a symmetrical pattern which gives the vapour both horizontal and vertical components of motion and adjacent fans have opposite rotational directions. An opposing pair of fans may also be mounted in the tunnel roof in the zone 5.
