Fondant creams are prepared by boiling a solution consisting of sugar, water, and starch syrup until the desired moisture content is achieved, and then simultaneously cooled and subjected to intense beating, to form the cream, under vacuum. An apparatus for carrying out the above preparation comprises a vacuum cooker associated with a first and a second evaporating chamber of which the outlet is the feed opening of a conventional cream beating machine.
