A quarter of meat 5 is de-boned by supporting its thick side on a table 32, forming part of a first cutting unit 2 engaging its thin side in a pincer device 161 of a second cutting unit 3, such that its spinal column 4 overhangs the edge of the table, moving a rotating cylindrical cutter 11 upwardly into engagement with the spinal column to grind it away while the meat is firmly held by retractable gripping devices 34, 55, 60; after completion of grinding, transferring the quarter by rotation of the pincer device to the underside of a feeding and supporting arrangement 131, 132, 137 against which it is held by a retractable pressure roller 141, and grinding away the ribs by rotating milling cylinder 124 while feeding the quarter towards the milling cylinder and away from the pincer device by driving the feeding and pressure rollers 131, 132 and 141. The support 137 is a fixed guide to determine the direction of movement of the leading edges of the ribs. In the embodiment of Figs. 1 and 3, the first cutting unit comprises a carriage whereby the cutter 11 and gripping devices 34, 55, 60 are movable towards and away from the pincer device. Piston- and-cylinder jacks 48, 57, 73 and 95 are mounted on the carriage for retracting and projecting the gripping devices 34, 55, 60 and the cutter 11, respectively, while a further pair of jacks 146 are pivotally mounted on the fixed frame 1 for elevating and lowering the pressure cylinder 141. The pincer device comprises jaws 162, 163 pivotally connected by a shaft 164 and operated by a pair of toggle links 173 actuated by a jack 167. The jaws extend over substantially the full width of the machine. Rotation of the pincer device is effected by an electric motor (174, Fig. 2, not shown) which is geared to the shaft 164. The rollers 131, 132 and 141, and the milling cylinder 124, are driven by a motor 127 through a gear box 133 and belt or chain drives 128, 134, 135 and 155, whilst a motor 21 on the carriage 2 drives the cutter 11 through gear box 24 and belts 107, 112. In a second embodiment (Fig. 4, not shown), the first cutting unit (2) is fixed, whilst the second cutting unit (3) comprises a carriage running on rails (182) on the fixed frame (1). In a third embodiment (Figs. 5-7, not shown) both cutting units are fixed but the pincer device is modified so that it can not only be rotated but also given a translational movement towards and away from the cutting unit (2), a further jack being provided for this purpose.
