Abstract

Fresh milk is treated to improve its storage capabilities by a method comprising maintaing the milk immediately after milking, for 20 minutes to 12 hours at a temperature between its milking temperature and + 10‹C. and thereafter cooling to above its freezing temperature, the milk then being ready for storage. The above treatment may be carried out under conditions of reduced pressure and/or in the presence of an inert protective gas.
