Abstract
1,218,081. Meat curing composition. GRIFFITH LABORATORIES Ltd. 29 April, 1968 [4 Aug., 1967], No. 20306/68. Heading A2D. A meat curing composition comprises 94.5 to 70 parts by wt. of substantially non reverted alkali metal (e.g. Na or K) tripolyphosphate and 5.5 to 30 parts by wt. of alkali metal (e.g. Na or K) hydroxide per 100 parts by wt. of the tripolyphosphate and the hydroxide in the composition. The composition may also include alkali metal nitrite and nitrate, sodium chloride, cane sugar and sodium erythorbate. The composition may be in the form of granules, pellets or cakes. The composition may be dissolved in water and pumped into the meat.
