Abstract

A fluid mass of acid-swollen collagen fibrils from dehaired animal hide has added to it 5-150 p.p.m., based on the weight of hide solids, of a proteolytic enzyme produced by the genus Aspergilli, the mass being then incubated for 8-72 hr. at 15-30‹ C., and finally extruded as a tube into a coagulating bath, the enzyme being inactivated by contacting the extrudate with an alkaline medium having a pH # 9À0. The enzyme may be obtained from Aspergillus niger var. macroporous, A. saitoi or A. oryzae. In examples the extrudable dispersion also contains alpha cellulose and lactic or hydrochloric acid, and following the usual homogenization is extruded into aqueous ammonium sulphate, and then contacted with ammonium hydroxide at pH 9À0. The resulting tube may be plasticized with glycerin and/or dextrose and/or carboxymethyl cellulose and also heat-cured, and conditioned in a humid atmosphere. The tubes may be made into sausage casings in a conventional way.
