Abstract

1,199,557. Preserving foods. V. H. SORENSEN. 3 Feb., 1969 [2 Feb., 1968], No. 5780/69. Heading A2D. Preserving food in a boiling apparatus wherein the temperature in this apparatus is controlled by means of a proportionalintegral-temperature regulator, for gaseous and liquid media permanently maintained and controlled as a certain predetermined linear function of the core temperature of the food. The linear function is selected depending on the nature of the food, endproduct quality and intensity of pasteurisation. The process is particularly applicable to meats and forcemeats, the treatment of hams and salted meat being exemplified. In operation, the meat is treated in a boiling apparatus which includes two temperature feelers, one of which measures the working temperature of the apparatus and the other feeler is inserted in the food and measures the core temperature thereof. These feelers are connected to a Wheatstone bridge circuit which by adjustment of the resistances therein, allows the working and core temperatures to be controlled, the former being a predetermined linear function of the core temperature of the food.
