Abstract
1,164,919. Chemically leavened bakery products. CHAS. PFIZER & CO., Inc. 18 Dec., 1967 [28 Feb., 1967], No. 57451/67. Heading A2B. At least 0.1 wt. per cent., preferably up to 2 wt. per cent., of sodium stearyl fumarate, based on the weight of flour, is included in chemically leavened bakery products, such as cakes, comprising flour, sugar, shortening, and emulsifier, in amounts such that the sugar to flour ratio exceeds 0.9 and the shortening to flour ratio is less than 0.35. Reference has been directed by the Comptroller to Specification 1,046,647.
