1,164,275. Removing cooked flavour from sterilized foods. EXPRESS DAIRY CO. (LONDON) Ltd. 14 Oct., 1966 [19 Oct., 1965; 2 Nov., 1965; 23 Feb., 1966], Nos. 44156/65, 46360/65 and 7981/66. Heading A2D. The removal of the initial cooked flavour produced in food products when sterilized by an ultra high temperature process is controlled by holding the product, after sterilization, under such conditions of temperature and/or pressure and controlled reduced dissolved oxygen content so as to support oxidation of the sulphydryl and other oxidizable compounds that contribute to the initial cooked flavour, the amounts of oxygen being so controlled that at the end of such oxidation little or substantially no dissolved oxygen remains, thus precluding subsequent long-term oxidative flavour deterioration of the product. The food products may be milk and milk products, creamed rice, soups, fruit juices and purees, alcoholic and non-alcoholic beverages, and baby foods containing cereals. In the examples: (1) a food product is sterilized at about 280‹F. for 1 to 2 seconds, divided into two streams one of which is cooled by indirect heat exchange under pressure to retain its dissolved oxygen and the other cooled by flash evaporation to substantially remove its dissolved oxygen, and the cooled streams are recombined for sterile packaging in gas impermeable containers; (2) separate streams of food product with (a) substantially no oxygen and (b) normal oxygen contents are heat treated and cooled by indirect heat exchange under pressure, the streams being combined before heating, between heating and cooling, or after cooling; (3 and 4) a food product is heated by indirect heat exchange and cooled partly by flash evaporation and partly under pressure; (5) a food product heated by steam injection is divided into two streams one of which is cooled by flash evaporation and then combined with the second stream, optionally after cooling the second stream under pressure.
