Vegetable products are preserved by enclosing them with a bactericidal gas generator comprising an alkali or alkaline earth metal metabisulphite and alum in an impermeable envelope which has an opening sufficient to allow the vegetable product to respire. Many vegetable products are specified and include fruits, vegetables, nuts, cereals, cut flowers, bulbs, tubers and roots. The envelope is formed from sheet material such as polyethylene or regenerated cellulose film. The preferred bacterial gas generator, which slowly releases sulphur dioxide, is potassium metabisulphite together with a small amount of alum which latter substance acts as a retarding agent. The gas generator substance may be supplemented by a preservative acid (or its alkali or alkaline earth salt), present naturally in the particular vegetable product to be preserved as the acid or acid derivative, such as sorbic, citric, benzoic, pectic, quinic, tannic, malic, tartaric, p-amino benzoic and stearic acids. Organic fumigants such as amyl acetate, ethylene oxide, ethylene dibromide, ethylene chlorobromide, ethylene or methylene dichloride, ethyl or methyl formate, and acrylonitrile may also supplement the gas generator substance. The gas generator and other additives may be enclosed in permeable sachets, or may be applied to the vegetable materials or packaging materials therefor as aqueous solutions or dispersions by dipping or spraying and subsequently drying them. A high relative humidity may be maintained within the envelope by wrapping water impregnated absorbent materials around the peduncles of the vegetable products. The preservation of grapes, bananas, pears, shelled peas and bunches of flowers is exemplified.
