Abstract

1,153,291. Hydrolysis of starch. JAS. BOWMAN & SONS Ltd. 15 July, 1966 [14 May, 1965], No. 20572/65. Heading C2C. [Also in Division C3] An edible glucose syrup is prepared by heating an aqueous slurry of impure starch containing at least 0À25% by wt. protein until the starch gelatinizes, reducing the viscosity of the mass by partial hydrolysis, adjusting the pH to about 4À5, treating the fluid mass with amyloglucosidase to hydrolyse the starch to glucose, adjusting the pH to neutral and separating the precipitated protein. The initial thinning of the starch paste may be effected by the addition of alpha-amylase. An example describes the hydrolysis of a wheat flour containing 10% by wt. of protein.
