Choline salts of organic acids are prepared by passing choline chloride solution over a strongly basic anion-exchange resin in the hydroxide form or over the bicarbonate form of a weakly basic anion exchange resin so as to obtain a solution of choline or choline bicarbonate, respectively, containing choline chloride as an impurity, fixing the choline on the hydrogen form of a weakly acid cation exchange resin, washing the cation exchange resin until no further chloride ion appears in the effluent and eluting the choline from the cation exchange resin with a solution of the appropriate organic acid or an alkaline earth metal salt thereof.
