A doughnut machine comprises a frying kettle 12 mounted in free-floating manner, a raw dough-receiving conveyer 14, adjacent one end of the kettle, having spaced flight bars 219 operating on the level of its frying shortening, a turn-over device 16 for the partially fried doughnuts, a delivery conveyer 18 having spaced flight bars operating on the level of the frying shortening, and a supporting frame structure having an outer frame and an inner frame, the outer frame supporting the inner frame in spaced relation thereto and the spaced inner frame supporting the frying kettle, which is provided with a series of integrally formed heating coils (132), (134), (136), (138), (see Fig. 12, not shown) for conducting a heat transfer fluid from a remote heater. The supporting frame structure includes a tubular, rectangular outer frame member 32 and a square inner frame member 34 which comprises a series of longitudinally spaced straight sections 61 and right angle end sections (63 (Fig. 6, not shown) forming non- connected, longitudinally extending top side rails on which the kettle is mounted. The bottom (90) (Fig. 11, not shown) of the frying kettle (12) is reinforced by cross braces (105) and divided into individual heating quadrants (106), (107), (108) and (109), each of which circulates independently, and has its own inlet (126) and outlet (160). The supporting structure and conveyers operating within the frying kettle form an adjustable unitary structure (500) (Fig. 8, not shown) which may be removed by a conventional powered block and tackle unit. Mounted in the frying kettle and under the dough former 260 is a submerged conveyer 262 which keeps the sinking dough pieces moving forward until they have gained enough buoyancy to be engaged by the flight bars of the receiving conveyer.
