A method of effecting heat exchange between two fluids in a plate heat exchanger, including the step of controlling the outlet temperature of at least one of the fluids by causing it or them to flow through a plurality of interspaces connected in parallel, the thickness of at least one of the interspaces being different from that of the other interspaces. The plates 1 or 3 are spaced the requisite distances apart by means of a gasket groove 2 or 4, filled with sealing means 5, and spacing members (not shown) to form the interspaces 6 and 7 or 8. Various fluid flow arrangements are mentioned including parallel flow, and flow in parallel through two banks of plates connected in series, the two banks being connected together to form one unit (see Fig. 2).
