Abstract

A continuous method of making a liquid hop extract involves the steps of continuously circulating a liquid solvent for hop extractives, e.g. water. through a hop boiling vessel, continuously passing hops through the hop boiling vessel in the same direction as and in contact with the liquid solvent, the hops being passed through the hop boiling vessel under positive impetus whereby they pass through the hop boiling vessel in a pre-determined time, boiling the hops and liquid solvent in the hop boiling vessel to dissolve hop extractives into the liquid, separating the hops from the liquid after the circulation through the hop boiling vessel to yield a liquid hop extract and spent hops and taking a porof the liquid hop extract to beer processing, and the liquid solvent that is continuously circulated through the hop boiling vessel comprises (i) fresh solvent to replace the liquid extract passed to processing and liquid losses, and (ii) the liquid hop extract not passed to the processing. Hops and solvent admitted to a boiling vessel 10 through a line 12 progress to the outlet 14 under the impetus of a rotating closely-aligned screw conveyer 20 and are boiled by heat supplied over at least part of their path by heaters 52. Liquid hop extract and spent hops from the boiler are pumped by a pump 24 on to an endless screen 28 from which the liquid hop extract is collected in a reservoir. The spent hops are sparged with fresh solvent from sprays 36 and finally are pressed by a roller 41 before being discharged off the screen. Both the sparge water from reservoir 38 and part of the liquid hop extract are recirculated to the boiling vessel 10. A further part of the liquid hop extract may be recirculated through a line 48 in order to reduce the proportion of hops-to-liquid handled by the pump 24. In the boiling vessel proportions of above 2 lbs hops to 31 United States gallons of water are preferably maintained. <PICT:1044849/C6-C7/1>
