Abstract

Viscosity-reducing emulsifying agents are prepared by subjecting an at least partially unsaturated triglyceride to glycerolysis and phosphorylation, a vacuum steam distillation being carried out between these two reactions at a temperature sufficiently high to remove the glycerol by-product, but not so high as to cause the reverse reaction to occur. Suitable triglycerides are safflower oil, niger seed oil, ground nut oil, cocoa butter, soya oil, cottonseed oil, or rape seed oil, all of which may be unhardened or partially hardened; the preferred starting material is rape seed oil partially hardened to an Iodine Number of 70 to 80 and melting at 32 DEG to 37 DEG C. Glycerolysis may be effected by refluxing under nitrogen or CO2 at atmospheric pressure and at 290 DEG to 320 DEG C., whereby water is expelled but glycerol returned, for about 3 hours, using more than 1 molecule of glycerol to 2 molecules of triglyceride. Catalysts such as NaOH or sodium glyceroxide may be included. Excess glycerol may be stripped off by steam distillation at 190 DEG to 220 DEG C., below 2 inches absolute pressure of mercury. Phosphorylation may be effected with P2O5, or under vacuum with polyphosphoric or phosphoric acid; about 1/2 mole of P2O5 per 1 mole of glycerolysis product being used. Preferably the phosphorylated product is then neutralized, to a bromocresol purple colour change end point, with ammonia (gas or aqueous solution), ammonium carbonate, NaOH, or ethanolamine. The product is for use as an additive to molten chocolate to reduce the viscosity, for which purpose it may first be diluted with cocoa butter, and mixed with lecithin.
