Abstract

[Also in Division A2] Freshly baked articles such as bread are enclosed in wrapping materials selected or arranged to have substantially zero air permeability, a high water vapour permeability at temperatures between 100‹ and 25‹ C. and substantially zero water permeability at temperatures below 25‹ C. The object is to permit an initial loss of excess moisture during cooling but to retain moisture during long storage periods at normal temperatures. The wrapping material may be one selected from known synthetic films having the desired characteristics or a film or paper may be rendered less permeable after application to the article and cooling of the latter, by spraying with liquid sealing media, e.g. varnishes. Alternatively, an impervious second wrapper, e.g. of polypropylene may be applied over a pervious wrapper after the required moisture loss has been achieved. Moisture loss may be accelerated by initially retaining the wrapped article at the high temperature.
