Les agents de charge sont des additifs alimentaires ajoutés dans une denrée alimentaire en vue d’accroitre son volume sans pour autant augmenter, de façon significative, sa valeur calorifique ou nutritionnelle. Ils servent à charger la préparation alimentaire, c'est-à-dire, à lui donner du volume sans toutefois dominer la saveur des aliments. Ces composés, autres que l’eau et l’air, sont également appelés agents de remplissage ou agents gonflants. Le polydextrose (E 1200), le mannitol (E 965), le maltitol (E 421) et la gomme arabique ou gomme d'acacia (E414) sont des additifs utilisés comme agents de charge.
Bulking agents are food additives added to a foodstuff in order to increase its volume without significantly increasing its calorific or nutritional value. They are used to load the food preparation, that is to say, to give it volume without dominating the flavor of the food. These compounds, other than water and air, are also called fillers or blowing agents. Polydextrose (E 1200), mannitol (E 965), maltitol (E 421) and gum arabic or acacia gum (E414) are additives used as bulking agents.

Les agents d’enrobage sont des additifs alimentaires qui protègent les aliments par une fine couche. Ils leur confèrent un aspect brillant et lisse lorsqu’ils sont appliqués à la surface externe. Ainsi, ils exercent une action physique en constituant un revêtement protecteur à la surface des aliments.
Cette catégorie d’additifs alimentaires correspond entre autres aux différentes cires, notamment la cire d’abeille (E 901), celle de carnauba (E 903) et celle de candelilla (E 902). On n’omettra pas la cire microcristalline (E 905), ni la résine du shellac (E 904) et encore moins la gomme arabique (E 414).
Coating agents are food additives that protect food with a thin layer. They give them a shiny and smooth appearance when applied to the external surface. Thus, they exert a physical action by constituting a protective coating on the surface of food.
This category of food additives corresponds, among others, to different waxes, notably beeswax (E 901), carnauba wax (E 903) and candelilla wax (E 902). We will not omit microcrystalline wax (E 905), nor shellac resin (E 904) and even less gum arabic (E 414).

La carnaúba est une cire issue des feuilles d'un palmier du nord-est du Brésil, leCopernicia prunifera. Elle se trouve généralement sous la forme de copeaux jaunes-bruns, cassants, très odorants.
