Abstract

L’invention porte sur un procédé d’estimation par un nez électronique d’un état de transformation d’un produit en cours de cuisson susceptible de se transformer par émission de composés organiques volatils, comportant les étapes suivantes : détermination, en cours de cuisson du produit, d’une signature des composés organiques volatils par le nez électronique ; détermination d’une variance associée aux valeurs de la signature ; détermination d’un écart de variance moyen, par comparaison de la variance obtenue à des valeurs issues d’une base de données ; identification de l’état du produit comme étant un premier état ou un deuxième état selon que la variance est respectivement supérieure ou inférieure à l’écart de variance moyen.
