L’invention est relative à un amidon thermiquement modifié produit par voie acide, caractérisé en ce qu’il présente un taux de citrate libre inférieur à 0,05 % et un taux de citrate fixé compris entre 0,12 et 0,16 %, et/ou un abaissement de la température d’éclatement au pic de viscosité RVA entre 2 et 10°C et/ou un volume de sédimentation compris entre 15 et 35 ml.
