CARACTERISATION DE L’EXTRAITCHARACTERIZATION OF THE EXTRACT
Comme illustré dans les exemples et figures illustratifs de l’invention, la Demanderesse a également mis en évidence, par une étude phytochimique dudit extrait de bois de rose selon l’invention, la présence très nombreux métabolites parmi lesquels 19 flavonols dérivés de la quercétine, 16 flavonols dérivés du kaempférol, 3 flavanonols, 1 anthocyane, 22 flavan-3-ols (incluant catéchine et tannins), 12 gallotannins, 5 ellagitannins et 2 dérivés de l’acide quinique.As illustrated in the examples and illustrative figures of the invention, the Applicant has also demonstrated, by a phytochemical study of said rosewood extract according to the invention, the presence of a large number of metabolites, including 19 flavonols derived from quercetin, 16 flavonols derived from kaempferol, 3 flavanonols, 1 anthocyanin, 22 flavan-3-ols (including catechin and tannins), 12 gallotannins, 5 ellagitannins and 2 quinic acid derivatives.

Des analyses RMN, notamment13C ont permis la caractérisation de ces fractions. Les sucres simples (détectés dans les fractions F09, F10, F11 et F12) représentaient plus de 80% de la masse d'extrait sec. Divers acides organiques ont également été détectés (acide coumarique, acide gallique, acide succinique, acide malique et acide quinique). La catéchine et l'épicatéchine étaient les seuls flavonoïdes identifiés. Un aliquot de chaque fraction de F1 à F12 a été dissout dans 700 μL de DMSO-d6 et analysé par RMN13C à 298 K sur un spectromètre Bruker Avance AVIII-600 (Karlsruhe, Allemagne) équipé d'une cryosonde. Après le traitement des spectres, les intensités absolues de tous les signaux RMN 13C ont été automatiquement collectées et regroupées sur les spectres de la série de fractions à l'aide d'un script informatique dédié. Les résultats ont été importés dans le logiciel PermutMatrix (version 1.9.3, LIRMM, Montpellier, France) pour l'analyse de clustering hiérarchique. c) incubation sous agitation du bois de rose préalablement broyé et du mélange enzymatique pour libérer dans le milieu réactionnel des huiles, des protéines et des sucres fermentescibles, pendant une durée dépendant des rendements recherchés,
d) séparation du milieu réactionnel pour obtenir de l'huile libre, une phase aqueuse contenant des protéines et des sucres fermentescibles, et une phase solide,
