La présente invention se rapporte à une composition alimentaire et à son utilisation pour réduire le risque de maladies cardio-vasculaires. Parmi les facteurs de risque cardio-vasculaire, l'hypercholestérolémie et l'hypertension artérielle sont deux facteurs principaux reconnus. Or, l'hypercholestérolémie, qui correspond à un taux élevé de LDL- cholestérol sanguin, est l'un des principaux facteurs de risque cardiovasculaire, qui est une cause importante de mortalité et de morbidité (Mensink et al., Eur. Le cholestérol animal et les phytostérols ont des fonctions dans l'organisme similaires (constituants cellulaires, précurseur de certaines hormones ....). Les phytostérols sont déjà connus par l'homme du métier pour leur capacité à diminuer le taux de LDL- cholestérol sanguin. En raison de leurs structures chimiques proches, les phytostérols limitent l'absorption du cholestérol au niveau intestinal en occupant les sites d'absorption de ce dernier. Depuis plus de 50 ans, de très nombreuses études ont mis en évidence le rôle et l'intérêt des phytostérols dans le traitement des patients hypercholestérolémiques. Ainsi, l'étude de Katan et al. (Mayo Clin. Proc. 78, 965-978, 2003) rapporte une diminution de 8,9% de taux de LDL- cholestérol sanguin chez les sujets lors d'une consommation quotidienne de 1,6 à 2,0 grammes de phytostérols incorporés dans des margarines ou mayonnaises Similairement, Berger et al. Le terme de phytostérols (présents sous forme libres ou estérifiés) désigne en particulier les stérols végétaux de sources naturelles, dont la composition est précisée dans les décisions de la commission autorisant la mise sur le marché de produits 10 alimentaires avec adjonction de stérols végétaux au titre du règlement (CE) n° 258/97. Les phytostérols comprennent les stérols végétaux et les stanols végétaux. Les stanols végétaux sont présents naturellement dans certains végétaux et peuvent également être obtenus par hydrogénation des stérols. The food composition of the present invention may further include additives such as thickeners, colorants, flavors, antioxidants, stabilizers, preservatives, acidifiers and emulsifiers conventionally used in the art.
