Abstract

Le moule (1) est formé de deux demi-coquilles (2'), (2 " ) profilées en U, opposées, superposées et accouplées, dont la fermeture et la compression axiale des viandes sont augmentées par un ressort à lames (12), qui s'engage extérieurement sur le fond latéral intégral (7') de la demi-coquille supérieure (2'). Le ressort (12) est préchargé pendant la phase initiale de compression à température ambiante, et, pendant le traitement successif de réfrigération à basse température, il décharge progressivement sa tension contre le fond (7') en le poussant contre lesdites viandes pour récupérer leur rétrécissement naturel.
