Abstract

A method of disinfecting with peracetic acid sugar solution circulating in a sugar beet sugar extraction unit in which the chopped beet is treated with an aqueous solution comprising 0.01-1.0 wt.% or more preferably 0.3-0.5 wt.% peracetic acid. Treatment is by sprinkling the beet on exit from the beet cutter. An Independent claim is included for the use for the purposes of the invention of an aqueous solution containing 5-30 wt.% and more preferably 15-25 wt.% of peracetic acid, 15-25 wt.% hydrogen peroxide and 5-25 wt.% acetic acid. More specifically the solution contains 15 wt.% peracetic acid and 23 wt.% hydrogen peroxide.
