De nombreuses barquettes existent à ce jour pour permettre la conservation de produits alimentaires. Ces barquettes présentent cependant un certain nombre d'inconvénients. En effet, elles ne permettent pas toujours d'éviter un contact entre l'exsudat et le produit alimentaire, en particulier lors du retournement ou du conditionnement du produit. En outre, en raison des matériaux utilisés, le produit alimentaire est isolé de l'environnement extérieur, empêchant tout transfert thermique, en particulier tout refroidissement de sa face en contact avec le matériau de conditionnement. De ce fait, on crée à l'intérieur du produit un gradient de température défavorable à la conservation de ce dernier. On constate en effet souvent que la température de la face du dessus du produit alimentaire est inférieure à celle de la face du dessous.
