Liquide limpide de:
- couleur : variable selon la variété de l'oignon choisie
- viscosité : 20 - 50 Pa.s -pH:5-5,5
- pression osmotique: 2800 - 3100 mO / kg
Exemple:
120 g (oignons) sont coupés et mixés avec 120 ml d'éthanol (95 %). Le mélange (200 ml) est placé dans un évaporateur rotatif pendant 150 minutes à 40 "C.
