Abstract

The subject of the present invention is a device for opening shellfish, especially oysters. It consists of a combination of a knife having on the one hand a large curved guard 2 going round the shellfish and indented 4 to permit visual inspection of the work, and on the other a very short blade 3 with a rounded end designed to penetrate easily into the oyster and part the two halves of the shell. Complete opening, by the cutting of the tendon, is then performed either with an ordinary knife or by extending the blade of the device, in the mobile blade version. The device is suitable for both domestic and professional use whether in catering or in the retail sale of shellfish.
