La présente invention découle d'expériences et d'observations effectuées lors de la transformation de sous-produits agro-alimentaires et fait état des possibilités de préserver des denrées périssables, comme la viande, le sang et le poisson, des putréfactions qu'engendrent normalement les bactéries aux températures ambiantes.BIOLOGICAL CONSERVATION AND USE PROCESS

- le pH acide inférieur à 6 des crèmes de levures qui ne convient pas aux bactéries nécessitant un milieu plutôt basique,
- le degagement d'alcool, reconnu aux odeurs aromatiques, conserve ce milieu,
- le pouvoir antibiotigue des levures qui sont des souches proches des champignons et des moisissures
Des processus enzymatiques, des réactions cataboliques et anaboliques entrent en jeu, mais sont complexes à cerner dans leur ensemble. I1 est plus rationnel de poursuivre comme annoncé précédemment par la voie des utilisations prévues pour ce procédé et de vêrifier, en son temps, par d'autres expérimentations, qu'il ne causera pas de préjudices jusqu'ici non observés.
