Pour produire du vin, il est classique d'introduire les graines de raisin et éventuellement la grappe dans des cuves dites cuves de vinification et de laisser la fermentation s'effectuer en procédant à des remontages qui consistent à prendre du moûtau bas de la cuve et à l'aide d'une pompe à arroser de moûtle chapeau qui s'est formé à la surface libre du contenu de la cuve. Mais le jus qui est remonté trouve très rapidement des chemins priviligiés et le chapeau n'est pas désagrégé. De plus les levures sont exagérement oxygènées,ce qui a pour effet d'activer la fermentation en produisant une élévation de température à un moment qui n'est pas souhaitable.
