Abstract
L'invention concerne un procédé de préparation d'aliments notamment de légumes blanchis ou cuits déshydratés destinés à servir de garniture pour préparations culinaires à cuire ou instantanées, caractérisés en ce que le blanchiment ou la cuisson ont lieu à l'étouffée dans l'eau de constitution de l'aliment dans une enceinte sous pression d'air de 0,5 à 3 bars absolus dans laquelle les aliments sont soumis à un rayonnement de courte longueur d'onde ou micro-ondes.
