Abstract

In the prepn. of casein by acidification of skimmed milk, the first stage of pH redn. is performed using an electrodialyser. Pref. this operation is effected until the pH is still above that at which the skimmed milk flocculates (i.e. pH 4.7), and the pH reached is esp. 4.9-5. Pref. the skimmed milk is passed several times through the same electrodialyser. Pref. the milk temp. is 4-25 (4-10) degrees C. Method avoids disadvantages of the use of HCl, namely its brutal action and the addn. of unnecessary or harmful materials which have to be removed.
