Abstract

Spun protein filaments are made contg. in their cross section dispersed fat particles with a dia. of 1-60 mu m and with a degree of saponification of is not >5%. The fat particles may contain fat-soluble additive such as flavouring agents, aroma components, preservatives, colouring agents, antioxidants, vitamins, food additives such as N-acetyl-L-methionine etc. The protein is e.g. soya protein. The fat-contg. protein fibres more closely resemble natural meat than prior art prods. The finely divided dispersed fat is retained during storage and subsequent processing, in contrast to prior art fibres surface treated with fats after spinning.
