Abstract

Prepn. of a starch hydrolysate comprises continuously passing an acid aq. starch suspension in a tubular heating zone at a pressure substantially above that of the saturated water vapour to heat it to >=100 degrees C and at least partially gelatinise to form a hot starchy liq. The liq. leaving the heating zone is passed out higher pressure into a constricted zone, then into a tubular reaction zone at a high pressure appreciably lower than the first high pressure zone. The liq. passes from the constricted zone to the tubular reaction zone in the form of a fine spray or mixt. with a sudden release of energy. The liq. forms in the tubular reactor a homogeneous starch hydrolysate. The process gives a uniform good tasting prod. with dextrose equivalents from 70-95 without requiring the use of enzymes.
