Abstract

Granular starch is converted directly into a soluble starch hydrolysate by (a) treating an aqs. suspension of a granular starch with (1) an alpha-amylase, and (2) a saccharifying enzyme, at a temp. between the normal initial gelatinisation temp. of the starch, and its actual gelatinisation temp. and pH 4-7 during a period sufficient to convert the starch into the hydrolysate, and (b) recovering the hydrolysate by sepg. the residual insoluble starch that has retained its granular form. Aqs. suspensions having a high starch content can be used, e.g. 10-30 wt %. This reduces the costs of recovering the prod. Practically all of the starch is solubilised, and the residual starch is granular, and thus can be recovered. Prods. with a high content of maltose and malto-triose can be prepd. The prods. with a high content of maltose/maltro-triose are useful in the prepn. of sweet foods, and also as intermediates in prepn. of polymers for use as detergent additives.
