Abstract

Liquid sulphur dioxide is introduced in precisely metered amounts into must in the mfr. of wine by passing it at constant temp. and pressure in an evaporator. The contact area between the liquid and the heat exchanger wall of the evaporator is altered in direct proportion to the required amt. of gaseous sulphur dioxide. The system is partic. economical for smaller establishments. It requires neither skilled maintenance personnel nor complicated control equipment.
