Abstract
Procédé pour renforcer l'arôme du café. Le procédé consiste à mettre au contact à contre courant, avec des cafés toréfiés et moulus progressivement de plus en plus frais, un liquide d'extraction aqueux afin d'en extraire les composants solubles, à faire passer un courant de vapeur à travers un lit de café contenu dans la colonne contenant le café le plus extrait afin d'en enlever les composants volatils, à condenser ces composants volatils et à les additionner à un extrait de café. Application à l'industrie du café.
