a. Façon de plier et de préparer une crêpe avec sa garniture. Cette méthode permet de lui faire supporter une chaleur de 150 degrés et plus sans qu'elle n'éclate et sans que le produit de garniture ne s'échappe par les côtés. b. Une crêpe (toutes formes) garnitures (tous produits). c. Blancs d'oeufs battus (ou similaire) - chapelure (ou similaire). d. Jaunes d'oeufs (facultatif). e. La crête ainsi fourrée et pliée et ensuite panée est destinée à la fabrication industrielle puis à la distribution en frais ou en surgelé.
