Abstract

La présente invention concerne essentiellement un procédé de conservation de poisson frais. Selon ce procéde, le poisson est élaboré sous forme d'une émulsion naturelle préparée en utilisant au moins comme ingrédients principaux du saumon haché, du beurre, des oeufs et du fumet de poisson à l'exclusion de toute addition de produit chimique et constituant un aliment qui, après préparation, présente déjà des qualités intrinsèques de conservation avant d'être mis en boîte et de subir une stérilisation à la chaleur. Le procédé de l'invention permet d'obtenir des conserves de saumon frais présentant d'excellentes qualités organoleptiques.
