Abstract

A sample of the prod. is measured for initial thickness, is then loaded under a known compressive force for a defined period, a measurement of loaded thickness is recorded, then the compressive force is completely removed and the sample allowed to relax after which final thickness is measured. The relationship between initial thickness, loaded thickness and final thickness is used to determine the visco-elasticity of the prod. which can be representative of prod. quality. The appts. pref. comprises a fixed, supporting, lower platen on which the sample is placed, and movable upper platen which is loaded to exert the compressive force. A programming controller relates compressive loading to the periods and to displacement of the upper platen in or order to record data required for the test process. Used for assessing and classifying culinary qualities of food prods., before and/or after cooking. Partic. corn, semolina, rice, food pastes, glutens etc.
