Abstract

An appts. used for prepn. of vinegar with an acetic acid concn. of >15% wt/vol. by the submerged fermentation process according to the principal patent is described. At least 2 fermentation vats are used each comprising a cooling system to maintain a constant temp. and an aeration system and the flow of fermentation liquid from one vat to the other is effected by a valve system. A typical appts. comprises a first vat with an aeration appts. drawing in air via a filter and rotameter, an air exit via a defoaming appts. a cooling coil, a valve allowing flow from the 1st to the second vat, which also has aeration and cooling means as above, a pump for replenishing the must in vat 1 after the flow to vat 2, a dosing pump for feeding 30-100% alcohol to vat 1, an alcohol analyser regulating the alcohol feed pump, and a pump for discharge the strong vinegar to store followed by replacement from vat 1.
