Abstract

Echangeur de lait pour mammifères. Il est constitué essentiellement par un produit à base de petit lait qui, par rapport au petit lait, présente une teneur en cations réduite de 20 à 55 % ainsi qu'une moindre teneur en lactose, la teneur en cendres est inférieure à 15 % en poids par rapport au poids à l'état sec, la teneur en albumine est supérieure à 17 % en poids par rapport au poids à l'état sec, la teneur en graisses est supérieure à 9 % en poids par rapport au poids à l'état sec, la teneur en eau est inférieure à 70 %, la valeur du pH se situe entre 4,5 et 4,0, mesurée en solution aqueuse à 10 %, le rapport Ca/P est compris entre 1,2 :2 et 2 : 1 et il contient un acide organique ayant des propriétés de conservateur.
