Abstract
Caseinate with higher viscosity in aq. soln. and emulsifying power contains 0.04-0.16, pref. 0.08-0.14 wt.% of a soluble aluminium salt (calculated on wt. of Al wrt wt. of improved caseinate). A 12.5% aq. soln. of sodium caseinate has viscosity at 15 degrees of 400-500 centipoises. A similar soln. contg. 1.5% hydrated aluminium sulphate has a viscosity of 50,000 centipoises. The prods. stabilise aq. fat emulsions and improve the water retention of pork prods. A pref. prod. is a caseinate contg. 0.12% of aluminium nitrate, chloride or sulphatte (pref.). It is prepd. by dissolving the Al salt (pref. Al2(SO4)3.18H2O) in water and then adding casein and the desired hydroxide (pref. NaOH). Pref. the casein is swelled at 45 degrees C and NaOH is added with heating to 80 degrees C. Th eprod. is spray-dried.
