Abstract

Procédé et appareillage de mise en forme de la viande par assemblage de morceaux divers et refroidissement à coeur très rapide, permettant en même temps une liaison des morceaux et un attendrissement général sans possibilité de contamination. Le boudin sortant de l'appareil est découpé transversalement en tranches conservées aussitôt à basse température après mise en forme définitive. Les morceaux de viande sont introduits entre deux tapis roulants munis d'aiguilles d'injection d'air comprimé à environ 5 bars et refroidis à 4 degrés. Des ensembles de peignes latéraux sont munis d'un mouvement alternatif de pénétration et de retrait pour cribler de perforations toute la largeur des couches de viande, d'une manière synchronisée avec l'avance des tapis. Des moyens de lavage sont incorporés à l'appareillage.
