Abstract

The depth to which the 'head' is forcibly immersed is altered several times during the course of fermentation. Change of depth can be at present time intervals or can be initiated by a signal corresponding to the measure of one or more fermentation paremeters, e.g. temp. or specific gravity. A horizontal screen, vertically displaceable on top of the 'head', is pref. for changing the immersion depth the screen is pref. suspended from screened rods which can be rotated to displace the screen up or down. The screen up or down. The rods are pref. rotated by a motor which responds automatically to a fermentation process measurement signal or to a timer signal. The top of the vessel is pref. covered to exclude. Atmospheric pollution from the fermentation process.
