Abstract
Method or parent patent is improved by using as enveloped microorganisms, strains of denitrifying bacteria, strains of lactic bacteria and bacteria strucins which ferment starch and sugar. Pref. genus hyphomicrobium is used on esp. genus lactobacillus or steptococcus. A process for fermenting milk continuous esp. comprises feeding it to a reactor contg. lactic bacteria enveloped in a calcium alginate matrix and removing the fermentation products. The process is used for the purificn. of effluents rich in nitrate, starch and sugar and for prepng. milk products such as acidified or pre-acidified milk for the prepn. of yoghurts.
