Abstract

A process for extracting flocculatable proteins from milk serum comprises passing a part of the serum actoss a bed of cationic exchange resin to give it a pH such that when it is combined with the remaining serum, the whole has a pH of about. 4.6. The process is used to recover lactalbumins and lactoglobulins. The process has the advantage of not using acid, normally HCl, which introduces chloride ions into the serum.
