Abstract
A process for transforming a protein mass into a ffibrous layered structure involves moving the mass along a spiral path at the same time compressing it, at a high temp. The compressed mass is then extruded through a long slit, then receiving the extruded mass in a manner to form layers, which as then pref. compressed together. Further processes as above employe an annular or a rectangular slit. The protein food prod. comprises a flat extruded material comprising layers of coarse fibrous structure. A curved product of similar structure is produced via an annular slit. The prod. is used as a meat or fish substitute. The layered structure obtained is similar to that of natural protein.
