Abstract

Fermentation of beer wort by the action if yeast in aerated wort is carried out at a pressure above atmospheric; pref. 1.6 bar, and at >10 degrees C., pref. 16 degrees C. Complete process pref. comprises a fermentation stage lasting 3-5 days, a maturing stage at the same pressure and temp. for 48-50 hours and a stabilising stage of >=3 days at 0.6 bar and 0 degrees C. The fermentation stage pressure can be achieved progressively or in a series of sharp rises and the amount of yeast introduced should be precisely measured. Raw materials are reduced by ca. 50% and process time is 8-12 days compared with 21 to 50 days previously.
