Abstract

Process for malting barley comprises pretreating the grains with a mixt. of enzymes capable of both making the membranes forming the external casing of the grains permeable to enzymes and of solubilising the cell walls and the interstitial material of the endosperm. The malt is partic. used in brewing. Process shortens the malting time, still obtaining excellent quality for brewing. The pref. enzyme mixture comprises hemicellulose and/or beta-glucanase, esp. also contg. at least one of cellulose, pectinase, xylanase, acid protease, and pectinesterase. The enzyme mixture is pref. of fungal origin, esp. using Aspergillus Nigher. The pretreatment pref. by soaking in the enzyme soln., is preceded by a soaking in water. After the treatment, the grains are treated with an aq. soln, of gibberellic acid.
