Abstract

The deep fat fryer has an inner pan in an outer body. Inside the pan are heating elements and a mobile support for the frying basket. A lid hinged at the rear has an edge seal and a front catch. During cooking the lid is closed to prevent the escape of fumes. The fumes rise to contact baffles suspended under the lid. The fumes cool and form a condensate which is directed into the drain pan underneath the fryer. Side baffles are provided in a space between pan and fryer body and the drain pan is emptied by pulling it out.
